A New York public school has become one of the first in the US to offer an entirely vegetarian lunch menu and they are reporting an improvement in test scores, attendance and student energy levels.

The menu includes roasted tofu, braised black beans and falafel – although children are still able to bring food from home if they wish. Since the new lunches were brought in the number of pupils who are overweight has dropped by 2%. Students are also being offered nutrition classes to allow them to make similar changes at home.

The school says that it opted for a vegetarian menu because the choices on offer by the city were superior in quality than the meat-based options. The headmaster has pointed out that lean organic chicken simply isn't offered as a choice.
